Step 1
Preheat the oven to 200 def fan forced. Defrost the puff pastry sheet, if using frozen.

Finely slice the leek and then sauté in a small saucepan on low to medium heat in a generous amount of butter or olive oil, for about 10 minutes. Slice a lemon and squeeze the juice of half of it over the leek. Season with salt and pepper and spoon into a bowl to cool.
Step 3
Chop the ends off the asparagus, and cut the Brie into slices.
Step 4
Now place your puff pastry sheet onto a lined baking tray. Spoon the leek over it leaving a 2cm border. Arrange the asparagus over the top and then the Brie. Zest some lemon over the top. Drizzle with a little olive oil.
Step 5
Reduce oven to 180 deg and bake for 20-25 minutes or until puffed and golden.
Step 6
Remove from the oven, sprinkle with parsley, season with salt and pepper. Slice and enjoy immediately as is or with a simple green salad.
