Step 1
Pop the kingfish onto a plate. Season lightly with salt and pepper. Add lime zest, lime juice, coconut and herbs to a bowl.
Step 2
Fold through the shallot, chilli, olive oil and herbs.
Step 3
Taste, adjust seasoning and citrus to your liking (don’t be shy with the lime if it’s a hot day). Arrange the cucumber and spoon over the dressing. Garnish with leaves.
